Sweet and Tangy Rainbow Slaw


We are all on the hunt for cool refreshing summer dishes, and this is just that! The truth is I have always hated coleslaw. I love BBQ, especially the southern vinegar kind, but whenever I order a BBQ sandwich I order it without slaw. Cabbage?! No thank you. The only time I want cabbage is when it’s in my bra to dry up milk. Then I made my version of coleslaw, and my life is forever changed.


I promise you this is the only slaw you will ever make again! Sweet and tangy, cool, crunchy delishiousness! This summer side dish isn’t only beautiful to look at, its also pretty healthy!

One thing I struggle with is my picky eating. More specifically, my dislike for vegetables. I have no idea where my toddler gets it from. That’s why this dish is such a victory! I can eat this stuff by the spoonful. I am always on a mission to make our veggies as delicious as possible, and this slaw is a winner!


Its also really simple to make. I have changed up the recipe depending on what I have, and it never disappoints. Sometimes I use mayo, sometimes I use greek yogurt, sometimes I add craisins, sometimes green onion. You can really make it however you prefer.


The base of this slaw is purple cabbage. I love purple cabbage. It’s so bright and pretty, I absolutely prefer it over green wannabe cabbage.

I use about half a head of purple cabbage which ends up being around 4 cups. Chop it up into thin slices.


Next I added 2 cups of matchstick carrots.


Then sliced up a green apple.


Then added 3/4 cup of blue cheese. I have also used feta, and that’s really yummy as well.


For the dressing I used the juice of half a lemon (to keep the apple from browning) 1 tbs of honey, 1 tbs red wine vinegar, 2 tbs of plain greek yogurt, and salt and pepper to taste.


Then mix it all up, and place in the fridge for at least 30 minutes for the flavors to come together.


That’s it! Super simple, right? Good luck to going back to your old coleslaw recipe after trying this. If a veggie hater loves these veggies, then the recipe must be pure magic. That’s exactly what this is…magic rainbow slaw.

Sweet & Tangy Rainbow Slaw

4 Cups Purple Cabbage, thinly sliced

2 cups Matchstick Carrots

1 Green Apple, Julienned

3/4 Cup Blue Cheese

1/2 Cup Craisins

1 Tbs Lemon Juice

1 Tbs Red Wine Vinegar

2 Tbs Plain Greek Yogurt

1 Tbs Honey

Salt and Pepper to taste

Combine all ingredients in a bowl and stir together. Let sit in fridge for 30 minutes before serving.
